4 T Black Forest Blend
1# ground beef
1# ground game (turkey, venison or elk)
3 strips bacon, minced
2 C leeks, white parts, chopped 1 egg
¾ C red wine (burgundy)
1/2 C tomato sauce
Preheat oven to 350°.
Brown bacon in a wide pan (4-5Min). Add leeks and 1 T of Black Forest Blend. Brown leeks (3-4Min) and then deglaze with ¼ C red wine. Simmer for a minute or two and let cool.
Mix leeks with meat, 2 T Black Forest Blend and egg together until well-incorporated. Press into a greased loaf pan. Top with ½ C red wine and ½ C tomato sauce. Bake uncovered for 45-55 minutes, or until set in the middle.
