1.5-2# Pork Loin
5 T Jamaican Jerk Blend
2 T olive oil
2 T soy sauce
4 T white vinegar
4 T orange juice
1 lime cut into quarters

Place all ingredients in a large, glass container. Marinate pork roast overnight or at least I hour. Heat grill until hot. Place limes on outside and pork on the inside of the grill. Roast pork, basting every five minutes with marinade. Remove limes after 15 minutes. Cook until pork is cooked through, about 30-40 minutes. Let sit for 5 minutes and slice. Serve with 1 quarter of the lime minced and sprinkled over.
