1 T olive oil
2 chicken breasts, cut into 1″ cubes
3 T Andouille Creole Blend
1 C chopped onions
2 C cooked rice
2 C prepared red beans
1 C chicken stock (or water if desired)

Coat the chicken pieces evenly with the Cajun Seasoning.  Heat olive oil in a large skillet.  When hot add chicken and brown for 6-8 minutes.  Add onions and cook until they begin to brown, about 2-4 minutes.  Add red beans and rice and sauté for 2-3 minutes, scraping bottom of pan.  Add stock/water and simmer on low until liquid is absorbed (about 10-15 minutes).  Serve hot.

Yield: about 4 servings
