Moroccan Beef Stew

Ingredients:

2 pounds Beef Stew Meat
1 T Olive Oil
3 T Casablanca Blend
¾ C Red Onion, sliced
1 C Zucchini, small dice
2 C Garbanzo Beans
1 C Summer Squash, small dice
1 C beef stock
¼ C Cilantro, chopped
8oz Button Mushrooms

Season beef with seasoning.  Heat a large pan until hot.  Add oil and when hot add beef.  Sear until brown (5-8 Min).  Add onion, zucchini, squash and simmer 6-8 Min.  Add garbanzos, mushrooms and stock. Simmer until beef is cooked (4-5 Min).  Top with cilantro.
