Beef Enchiladas with Salsa Verde

INGREDIENTS

1# Ground Beef

8 Corn Tortillas

3 T Little Village Seasoning 

1 C Re-fried Beans

1/2 C Onion, chopped

½ C Bell Pepper, chopped

¼ C Jalapeno, minced

2 C Tomatillos, cored

1 C Cheese, shredded

1 T Oil

Preheat oven to 350˚.  Heat oil in a pan until hot.  Add onions, bell peppers, jalapeno and 1 T seasoning.  Sauté 5-6 Min or until it starts to brown.  Remove and puree with tomatillos in food processor.   Add ground beef and 2 T seasoning.  Brown 5-6 Min.  Add beans and stir.  Cook 3-5 Min.  Spoon equally into tortillas to make burrito.  Lay seam side down in a baking dish.  Top with cheese and bake until cheese is melted, and beef is cooked (20-30 Min).  Top with salsa verde.
